Grit & Grain Podcast sat down with Jack McQuade, co-owner of the beloved, notorious, and, sadly, closed Swiss Pub, which was often referred to as the best bar in Tacoma. McQuade tells the story of how he, Bob Hill and Gayl Bertagni left Engine House No. 9 to open the Swiss Pub in 1993 in a sketchy part of downtown Tacoma and built it into an institution. McQuade also discusses beers from those early days, Bertagni’s cooking, Hill’s live music expertise, the art, Polka Sundays, the benefits, and his beloved staff.
